Sanitation Required

(a)

Eggs shall be handled under reasonably sanitary conditions in compliance with the rules of the department.

(b)

After being received from the producer, shell eggs intended for human consumption shall be handled in a manner that prevents undue deterioration.

(c)

Eggs in the possession of a person engaged in the sale of eggs are presumed to be intended for human consumption unless the eggs are:

(1)

denatured; or

(2)

labeled in accordance with a specific intended use other than human consumption.
